Method
*Add 3 g Agar to 125 g (~4.25floz) hot water, whisk. Add 375 g (~12.75floz) fresh lime juice at room temperature, whisk to combine. Ten minute ice bath, whisk. Strain through a super bag strainer (1 micron), finish with coffee filter for clarity.
